I’ve never been a fan of very sweet desserts. I cringe when I taste frosting or extra sweet cookies. So when I want something sweet I look for recipes with less sugar or are a bit tangy. One of my favorite desserts are lemon bars. If you are like me and prefer to have less sweet desserts than this recipe is for you.
Ingredients for crust:
1 cup unsalted butter
2 cups sifted all-purpose flour
1/2 cup sifted confectioners’ sugar
Ingredients for filling:
1 1/2 cups white sugar
6 tablespoons lemon juice
1/2 teaspoon baking powder
1 tablespoon all-purpose flour
1.Preheat the oven to 325 degrees F (160 degrees C). Grease a 9×13 inch pan.
2.First make the crust by beating together the butter, flour, and confectioner’s sugar until fluffy. Pour mixture into the baking pan and smooth out. Place it in the preheated oven.
3.Beat the eggs and sugar in another bowl. Add 6 tablespoons of lemon juice to the egg mixture. Grate the rind of the lemon into the egg mixture. Put 1 tablespoon of flour and 1/2 teaspoon baking powder into the mixture. Mix until blended. Pour the lemon mixture into the crust.
4.Bake for 35 minutes, until filling is set. Let cool before cutting.
